Every year, since 1994, the best new, value-added products made from Alaska-caught fish compete in the New Products Contest. It is always exciting to see, and taste, what the industry has come up with to entice consumers&emdash; "Salmon Santa Fe", Bold n' Zesty® Buffalo Wedges, "Ninilchik" Lox, to name a few. Products must have been developed within the last two years, be market ready by entry deadline and fit in the following categories: • Salmon: Retail and Foodservice • White Fish: Retail and Foodservice • Smoked Products The Symphony judges - including chefs, major food service buyers, seafood wholesalers, and food editors - evaluate each product with respect to taste, price and marketability (among other things) and to deliver invaluable guidance to producers. Top category winners from the private judging receive free exhibit space at the International Boston Seafood Show, a product photo shoot, rights to use the Symphony Winner sticker on their packaging and in their promotional materials, and excellent exposure through press releases and other media coverage.
